TNLF Mo Meat Taco x Kid Cudi

What up ya’ll! Honestly, I feel like a stressed out and overworked husband that has been neglecting his beautiful wife and her needs for the past few weeks. The truth is that I’ve been totally tied up beyond capacity and on a bit of a hiatus as a result. Luckily J-Oats has been keeping things fresh and wonderful for you.

Although I’ve been out of touch for a few weeks, I had a short blip of music mania on Friday night while having a meat rager with a buddy. We were basically listening to Hype Machine while cooking and drinking. Admittedly the hearting got a little out of control. I blame it on the Porkslap. Is there a term for beer goggles of the ear?

Anyway, among the tracks we listened to was Kid Cudi’s “Fifty Ways To Make A Record”. This track stood the test of time, still sounding beautiful after I rolled over to listen to it again in the morning. On another note, our said meat rager included an insane taco we made up on the fly. My favorite part was the Cherry Maple Cracked Pepper Bacon. Mmmmmmmmmmmm. Yum. I highly suggest trying this. I must have eaten 8 of them.

TNLF Mo Meat Cow and Pig Taco (more properly named a Filet Mignon Cherry Maple and Cracked Pepper Bacon Taco)

Ingredients:

1 chateaubriand roast or petit filet roast or 2 filet mignon steaks
1/2 white onion
1 bunch cilantro
1 tsp red wine vinegar
1lb bacon
5 tbsp maple syrup
splash of maraschino cherry juice
1tbsp cracked peppercorns
1 lime
salt and pepper to taste

Instructions:

Lay out bacon slices on cooling rack and place on top of sheet pan. Combine maple syrup and cherry juice. Paint onto bacon slices and season liberally with cracked pepper. Put into 400 degree oven until crisp.  Dice onion and rinse well under cold water. Combine with roughly cut cilantro, vinegar and juice from half a lime. season with salt as needed and refrigerate.  Season beef with salt and pepper and sear on a hot cast iron pan until med rare. let rest for 10 minutes and slice very thinly.  Place everything on toasted corn tortilla with a sensitive design eye and garnish with lime.
